These are actually first-of-the-season Wild Honshemeji, also referred to as Fried Chicken Mushrooms. A favorite in Asian and Italian cuisine, they have a subtle but complex flavor with light woodsy notes. Wild Honshemenji are delicious sauteed and seasoned with garlic, shallots, soy sauce, ginger, scallions, fresh herbs and the like. They're delicious served as a garnish for beef roasts, game meats, whole fish and pasta dishes and maintain their beautiful appearance and crispness even when cooked for lengthy periods.
