Founded by Kevin Ouzts in 2009, The Spotted Trotter in Atlanta focuses on humanely sourced proteins, sustainable ingredients, and crafting high-end, Southern-style charcuterie. Made in the traditional Spanish style, this sausage is smoky and deep red, thanks to smoked pimentón. Not to be confused with fresh chorizo, this dry cured version is wonderful sautéed then steamed with clams, seared and folded into rice, or simmered with beans.
