Knoll Farm is known as the pioneer of green garlic. Initially planted it as an experimental winter garlic crop, it sprouted as a young, sweet, scallion-like shoot in late February, to get people to try it, the owners combined diced green garlic with Cowgirl Creamery Fromage Blanc then spread it on a sourdough baguette at the farmers market in San Francisco. The rest is history. The bulbs are moist, on the sweet side, with mild garlic flavor. Use the entire shoot raw or cooked.
