Bethmale is typically made with cow's milk, but legendary French affineur Herve Mons is anything but typical. This here is a Bethmale Chèvre, made with goat's milk. It's aged for six weeks in the Mons caves, during which it develops a durable orange rind, airy and ivory paste, and sweet flavors of peppered hazelnut and blonde stone fruit.
