Hand made from pasteurized cow and sheep's milk on Cahill's Farm in Limerick, Ireland using Kilbeggan Irish Whiskey. This is a traditional Irish monastic cheese reputedly brought to Scotland by Irish Monks. The taste is fruity, sweet, and nutty and the texture is smooth and rich. The hint of whiskey doesn't overwhelm the essential lactic flavors. Great with fruit or tucked in sandwiches.
