Long green shoots that appear above-ground in early spring while the bulb is busy developing underground. When you pull them up before the bulb is fully developed you get these lovely stalks with a mini garlic bulb at the bottom. The flavor is very different from mature garlic - it has a pleasantly sweet, garlicky flavor minus the bite. Delicious both sautéed and raw.
