Japanese Knotweed, Raynoutria japonica, is an invasive plant native to Asia, where it is eaten in the spring for its health benefits and unique flavor. Meadows and More harvests it at a specific stage- when it is more than a shoot, but before the leaves begin to branch out and the plant becomes woody. At this point, it has a rhubarb like flavor, making it a versatile ingredient that can be baked, pickled (when cut on the cross section), or used as a substitute for rhubarb in various dishes.
