These small flower buds of a native Mediterranean bush are hand harvested, sun-dried and pickled in a vinegar brine. These are the petite nonpareil variety which are considered to be the finest. Always rinse before using and add to dishes like pan sauces, vegetable condiments (think eggplant caponata) or stews for added piquancy. Capers are also frequently used as a garnish for meat and fish dishes.
