Flower stalks topped with seed-filled buds that appear on hardneck garlic plants in early spring. Scapes are harvested about 3 weeks before the underground bulb is ready. They have a mild garlic flavor minus garlic's typical bite and can be pureed raw into pesto. They're also great stir fried or sauteed for a frittata filling.
