Made using 100% sheeps milk wheels from the Pyrenees, which we develop into a rich, nutty cheese by aging them in our Natural Rind Cave. The result is smooth and creamy, with a touch of earthiness at the rind, a cooked-milk sweetness, and touch of tang.
