This fresh cheese is made from the milk of the water buffalo in Campagnia, Italy. The milk is flown in fresh every week and made into mozzarella by the Salzarulo family of Lioni Mozzarella in New Jersey. Mozzarella di Bufala is prized for its pleasantly tart, refreshing flavor and supple, elastic texture. It's more tart and more tender than our domestic cow's mlk mozzarella. Dress with extra virgin olive oil and fresh basil leaves.
