Also know as Persian Sweet Limes, these pretty yellow citrus fruits become available late fall and last through winter. The brightly colored rind is very thin and the abundant juice inside is less acidic than regular lime juice, yet not really sweet either. The fragrant rind is mostly used for zesting and the juice is primarily used for flavoring drinks. Sweet limes don't have a long shelf life so should be used soon after receiving. With their brightly colored rind, Sweet Limes also make a nice fruit bowl garnish.
