This Italian radicchio variety is so delicate and ephemeral you won't believe it's radicchio. The parchment thin leaves are pale yellow speckled with red-pink flecks. The heads arrive from Italy either ball-shaped or floral-shaped and separate easily with the leaves falling like petals on the plate. Castelfranco is the epitome of delicacy - it tastes somewhat bitter with a buttery texture. Air-shipped every October, it is one of the bright salad beams that help get us through winter.
