The most popular domestic caviar comes from the only commerically fished wild sturgeon in the U.S., Hackleback, a.k.a. Shovelnose. These smaller, fast-growing sturgeon produce small grain caviar that is nearly pitch black in color with an amazing firm texture and clean, mild flavor.
