Apricots are the one of the first stone fruits to signal the approach of summer. These slightly fuzzy little organic fruits have light orange skin and richly flavored flesh thats sweet, slightly tart, and hints at almond and vanilla. Unlike other stone fruits, apricots ripen from the inside out, making it important to resist the temptation to test for ripeness by feel. After a couple of days at room temperature, the fruit should be ripe and ready to eat, but a gentle, seductive aroma is always a good hint.
