Sfoglini is a Brooklyn based producer of small batch, freshly extruded pastas made from the finest organic flours in America. They use traditional bronze dies which give their pasta a textured, porous surface for your sauce to cling to. They also dry at low temperatures to preserve nutrition and flavor. Cavatelli are one of our favorite pasta shapes. The elongated shells are more bean-shaped than shell-shaped, and are a specialty of the Apulian region of Italy. They snare morsels of sauce in their small cavity, and slide down easily. Cavatelli are great in soups, and are especially delicious tossed with beans and sauteed greens.
