A minty Japanese herb also known as perilla leaves, shiso is a member of the mint family. Not quite as sharp as mint, shiso has a fresh flavor with a bitter notes that complement and undercut the fattiness of fish or red meat, and is often used as a foil for richer foods. You can use fresh shiso to make a pesto for Asian noodle dishes, or to give cocktails a distinct herbal flavor.
