Sunchokes are a tuber related to sunflowers with an artichoke-like flavor and a water chestnut texture. When served raw in salads or as a crudite, they will be crisp, juicy, mild and sweet and stand up well to pre-dressing. They are wonderful sliced thin and pan-sauteed in olive oil or butter or oven- roasted in chunks. Roasted sunchokes are sweet with creamy interiors and a very light chestnut-ty flavor. They also make lovely purees.
