Black Forest Ham is one of the most famous hams in America, and the style, as we know it, may have been created by Ferdinand Schaller nearly a century ago. Using his German charcuterie training as a basis for experimentation, he worked until he settled on a ham that's smoked, then molasses-dipped, for rich color and a touch of sweetness. The black forest ham was born, and for 80 years its been a staple at the Schaller & Weber store on Manhattan's Upper East Side.
