These small, spiky orbs are an exotic close relative of the lychee and widely popular throughout Southeast Asia. Baldor brings them in direct from various countries like Vietnam, Guatemala and Hawaii. Like lychee, the alabaster-like flesh is juicy, sweet, silky and fragrant (though less acidic than lychee). Rambutan contain one large seed which separates easily from the meat. Wrap rambutan in a paper towel and place in a perforated plastic bag, then refrigerate up to two weeks.
