Distinctly flavored, salty sheep's milk cheese produced on the island of Sardegna, Italy. Ricotta Salata is pleasantly piquant when young and usually crumbled or shaved over pasta. Especially delicious showered over pasta dishes made with fresh tomato sauce and green beans or chard.
