Beautiful, buxom heads with the same firm, crumbly texture as white cauliflower. Color can range from pale to jewel-toned and derives from the antioxidant anthocyanin, which is also found in red cabbage and red wine. Purple cauliflower has a mild and slightly sweet with nutty nuances.
