A rindless cheese matured in pitch black wax helps this cheese retain its moisture, creating a smooth and creamy texture. A Roquefort style mold is used to impart lingering punch, which melts away to distinctly fruity, pear-like tanginess. From the lush green pastures of the island, where the cow's graze, a distinct grassy, nutty flavor is imparted into the cheese, a flavor great with a New Zealand Sauvignon Blanc.
