Rethinking Food Asset Potential


Each year, 40 percent of the food produced in the United States is not consumed. As one of the largest food distributors in the northeast, Baldor is deeply committed to addressing this problem.

In 2016, we developed a program to completely eliminate the discarding of food products from our Fresh Cuts facility. This program, termed SparCs (scraps spelled backwards) ensures 100 percent of the leftover food product generated from processing fruits and vegetables, about 100,000 pounds per week, is captured and used for human or animal consumption. Since the program’s inception, we have successfully diverted over 10,000 tons of produce from landfill.

We continuously explore different avenues to utilize SparCs. We work with several chefs who incorporate SparCs into recipes for broth, sauces, juice, and baked goods. In addition to selling SparCs to chefs, we partner with several farmers who feed SparCs to their animals, providing them with a high quality, nutritious supplement to traditional animal feed.
