Officially known as Pleurotus djamor, they are a member of the most popular mushroom family of all time. Oyster mushrooms have a mild flavor with a soft, thick, silky texture. They are very versatile and can be used in soups, sauces, stews and stir-fries. Oyster mushrooms are also packed with more nutrition than other mushroom varieties in that they contain vitamin C, minerals, protein and amino acids. Alas, these pretty-in-pink mushrooms will lose their blush when cooked but you can always serve slivers atop a mix of spring salad greens.
