This organic farm in Milton, N.Y. now offers loose red beets sans the leafy tops. They really do taste deeply earthy and sweet at once. Roughly peel, cut in chunks and gloss with e.v. olive oil, then sprinkle with salt and pepper. Roast in 375 degree oven about 40 minutes, turning once in between. Let sit in foil packet a couple minutes till ready to serve - they'll be gelatinous in the middle, intensely sweet with a little caramelization along the edges. Add to leafy, grain or rice salads, puree in soup, toss with pasta and golden breadcrumbs.
