This Italian artichoke variety is called Violetta. Although we call them baby artichokes they actually vary in size from very small to medium. The purple shading is mostly on the exterior leaves. Remove any spiky outer leaves that have even a hint of toughness or prickliness. Cut chokes in half, scoop out the tiny bit of bristly choke with a serrated grapefruit spoon, and brush each half with a little evoo. Sprinkle with fresh breadcrumbs mixed with a little fresh chopped parsley, garlic, parmigiano cheese, salt and pepper. Bake about 20 -30 min. at 350 until crumbs are golden and chokes are soft. You can pour a little chicken stock in bottom of baking pan to keep them from sticking and to help soften the exterior.
