Nettles are small, serrated, spade shaped leaves with sage-green coloring that grow wild in spring. They contain a substance that stings but is eliminated by soaking the leaves in water or cooking them down like spinach. Kill the sting by mincing finely if you want to add raw to salads. Cooked nettles are delicious in soups, ravioli stuffings and omelets.
