More About This Product

With a texture and flavor similar to porcini or Royal Trumpets, these firm, white-fleshed, stubby-stemmed fungi are incredibly tasty. Cut them in thick slices or quarters and simply sear in good olive oil with salt. They have a springy, juicy texture with a touch of crispness and a sweet, nutty, winey flavor. Some liken the flavor to straw mushrooms prevalent in many Chinese dishes. Also called Godzilla Mushrooms or Wine Cap Stropharia, the caps of the larger mushrooms are more reddish brown while younger specimens have a port wine-colored cap. Our crop is cultivated in China but they can be found growing wild in summer and fall throughout North America.
