This mix might be too strong and hearty to eat raw in salad, but wilts beautifully when sauteed or steamed. To serve over pasta, saute with lots of chopped garlic and add reconstituted dried porcini mushrooms for more depth of flavor. Serve a wilted mound of braising greens sprinkled with Parmigiano cheese aside loin lamb chops. Their earthy, mildly bitter flavor is the perfect foil for rich, buttery lamb.
