These are the shoots of the hop flower used to make beer. The fuzzy textured leaves and green shoots are best sauteed or steamed and buttered to mellow their grassy flavor. In Italy they are used mostly for risotto. Expect a light, delicate, hoppy flavor with a slightly bitter edge.
