Knoll Farm is known as the pioneer of green garlic. Initially planted it as an experimental winter garlic crop, it sprouted as a young, sweet, scallion-like shoot in late February.To get people to try it, the owners combined diced green garlic with Cowgirl Creamery Fromage Blanc then spread it on a sourdough baguette at the farmers market in San Francisco. The rest is history.
