Spigarello is an Italian heirloom variety of broccoli with lineage in both the broccoli and kale families. Nutrition-wise, that is already a mouthful. Farmer Martin of Salinas tells us Spigarello is actualy the dark blue, tear-drop shaped side shoots of a broccoli plant with the tiniest flowers on top. It boasts a wonderful mild, grassy flavor - sort of like broccoli rabe without the bitterness. The other amazing thing about Spigarello is that, although it holds its shape and structure when cooked in soups or sauteed, the leaves are never tough. They can be sliced in ribbons for salad or steamed, blanched or sauteed with delectable results. Spigarellos is a real contender in the sauteed greens family. Chefs just love it!
