This "fiesole" variety of California baby artichokes starts in spring and lasts through November. Their color is a deep, wine-y red and they boast a nutty flavor and tender texture. Related to the famous Violettos artichokes of southern France and Tuscany, "fiesole" are named after a small town north of Florence. Trim the tips and stem, then steam, boil or saute in good olive oil with garlic and mint. They keep their color when cooked and have ornamental applications when raw.
