Harvested mostly for its feathery, lacy fronds while the bulb is still small. The super-tender fronds (softer than conventional fennel fronds) belie a potent licorice flavor. Don't hestitate to toss them raw into green or grain salads dressed with a light vinaigrette. They're also commonly stuffed into the cavity or a roasting whole fish or spread as a bed under one. Great chopped and added to yogurt or granola or sprinkled over fried eggs.
