Theirs is a third generation farming family that has practiced the age-old technique of dry farming on about half of their cropland, depending only on rainfall for moisture. Besides being mindful of California's scarce water supply, another advantage is that the beans grow slowly over a longer period,developing an intense flavor, and an earthy-nutty richness that comes through even after the beans are completely dried like these. Cannellini are large white kidney beans - creamy, mild, melting, terrific in thick soups with wilted kale or other cooked leafy greens.
