Grown on Iacopi Farms, located in Half Moon Bay, just south of San Francisco. Theirs is a third generation farming family that has practiced the age-old technique of dry farming on about half of their cropland, depending only on rainfall for moisture. Besides being mindful of California's scarce water supply, another advantage is that the beans grow slowly over a longer period, developing an intense flavor, and an earthy-nutty richness that comes through even after the beans are completely dried like these. Dried borlotti are a sub variety of cranberry beans that are a little rounder and larger. Once dried, they look darker than dried cranberry beans.
