Grown on Iacopi Farms, located in Half Moon Bay, just south of San Francisco. Theirs is a third generation farming family that has practiced the age-old technique of dry farming on about half of their cropland, depending only on rainfall for moisture. Besides being mindful of California's scarce water supply, another advantage is that the beans grow slowly over a longer period, developing an intense flavor, and an earthy-nutty richness that comes through even after the beans are completely dried like these. Dried cranberry beans lose their variegated color when cooked. Though they seem to fade out, they develop an incredibly meaty, rich flavor and dense, chewy texture. When you want to replace meat with a dried legume, we recommend dried cranberry beans.
