Grown on Iacopi Farms, located on the San Matteo coast near Half Moon Bay, just south of San Francisco. Theirs is a third generation farming family that has practiced the age-old technique of dry farming on much of their cropland, depending only on rainfall for moisture. The advantage is that the beans grow slowly over a longer period and develop intense flavor, and an earthy-nutty richness that comes through even after the beans are completely dried like these. Their dried Butter beans are the Iacopi's favorite because they make the best chili, and are great stewed, boiled and added to salads for heft.
