Strip Steak goes by many names - Delmonico, NY Strip, club steaks - and it is one of the most popular of all beef cuts. Ours are hand carved from Certified Black Angus Beef raised in the Midwest which makes them a "cut" above the others. The strip is a firm-textured, well-marbled piece of meat - tender, juicy and very, very flavorful without being too fatty. It comes from the short lointhe most prized part of any steer. It's actually the boneless top loin muscle, a porterhouse minus the tenderloin and the bone.
