These mature, Red Flame seedless grapes are left to dry in the Mojave desert sun for 2 full weeks after they are ripened. They are then briefly steamed to restore some pliability. The result? - a raisin that is plump and supple both inside and out and, like any fruit allowed to ripen close to its nutrient source (in this case the stem), they taste more deeply of themselves, more "raisin-y" if you will.
