A cross between a sour orange variety and a Palestinian sweet lime, Bergamot contains a lot of high- acid juice and is prized for its pungent, high-oil rind which is often used to make marmalades, dessert & sauces. The rind is also a chief flavoring ingredient in Earl Grey tea. The juice has shades of Seville Oranges and grapefruit with a pale, golden hue. Pour over a roasting chicken (stuff the chopped fruit inside cavity), squeeze into seafood salad vinaigrette or whisk into salmon marinades. Use the bitter juice in designer cocktails, julienne the preserved skin and add to steamer when steaming fish. Theyre also great for infusing ice cream, citrus sorbet or crème brulee.
