Beecher's signature "Flagship" cheddar cheese has a sweet finish and creamy texture, which is atypical of most cheddar cheeses. It is made using cultures typically used for Gruyeres and Emmentals which greatly changes the nature, flavor and texture of their cheddar. After aging approximately one year, Flagship is still moist with a milky aroma while maintaining a butter-like appearance.
