This classic pasteurized sheep's milk cheese is made in the French Pyrenees in the provinces of Ossau Valley and the hills of Iraty using the milk of two different ewe breeds. The ivory colored paste is sweet and buttery - especially for a sheep's milk cheese - and has a lovely hazelnut aroma. Ossau Iraty is similar to Etorki but fruitier and tangier with a firm, oily texture. Enjoy with full- bodied red wines or Merlot. It is especially great for melting.
