Cornish Yarg is a relatively new cheese but made from a recipe from the 13th century. It's crumbly texture and slightly acidic flavor balanced by a creamy mouthfeel is reminiscent of younger cheddars from the region. This version by Allan and Jenny Gray is made exclusively for Neal's Yard Dairy with a traditional rennet and dry salted by hand instead of a dip in brine. The nettle leaves pressed into Cornish Yarg gives the cheese a very distinctive appearance to compliment the unusual name which is an inversion of “Gray”, name of the proud parents!   Chardonnay brings out the best in this cheese.
