service item. When using Grade AA butter, the consumer knows exactly what they have. With a

lesser grade product the grade does not reveal the types of defects which can cause serious problems in the finished product. The problems

can include functionality, off-flavors, and excessive shrinkage. In the long run a lower grade product can cost more in

returns, rejections, out-of-spec products, and quality control aspects.
